You can import and share roasting profiles and that is an outstanding and priceless thing for us in Boquete where not many people roast coffee. You can use a curve from somebody in Canada, which we have and use it with our coffees in Panama, and come out with the same cup quality.

We could roast what was an extremely soluble coffee, but maintaining delicate acidity and florals specifically. Roasting on Stronghold, I could get sweeter coffee that was just as soluble as a more developed roast on a drum roaster, but still had that really high acidity and it was really great.

S7Pro is just amazing! It is such an easy to use roaster with a super friendly touch screen interface. All the coffees that I had roasted so far using the S7Pro are giving such a clean finish, highlighting also coffee's characteristics to the max. The consistent color and the expansion of the beans during and after the roasting are unique too. The roaster gives you the chance to have consistent beans with no black spots even when you roast the beans very quickly.

Although it can feel a bit intimidating at first, learning to roast on the S7Pro was quick. Automating profiles is super easy, and I love that it records every roast for future reference or automation. The interface is really intuitive, and it's easy to try new things. I wouldn't trade this roaster for any other.
